UMF™ mānuka honey is mostly monofloral and comes from the Leptospermum scoparium (Mānuka tree), which is native to New Zealand. The limited flowering season, two to six weeks every summer, makes it rare and highly sought after.

In comparison, regular honey is often multifloral, collected from a variety of nectar sources, and is generally more widely available.

The biggest difference lies in the science. Mānuka honey is naturally complex and contains 2,300 signature markers that have been scientifically identified. The prominent markers are Leptosperin, Methylglyoxal (MGO) and Dihydroxyacetone (DHA), all measured under the Unique Mānuka Factor (UMF™) quality assurance system. Regular honey contains MGO, between 30 to 70, but lacks the highly concentrated levels that make mānuka honey unique.
